I received a beautiful cookbook from my best friend Rachel. It's pretty much like Humans of New York but for food. The photographs are quite lovely and the simplicity of the layout wins me every time. I've decided I want to try out every recipe in this book, and hopefully finish this by the end of the year. I'll document every recipe I make :)
I've been using Rachel's little note as a bookmark because it cracks me up every time. I miss that lady.
I started with literally the first recipe in the book, Shrimp Ceviche. It was meant to be an appetizer, but I made it as a lunch instead. It definitely doesn't have the traditional ceviche flavor, it's more of a lighter version. Would I make it again? Not amazing enough to be it's own meal, but perhaps an appetizer for a large crowd would be nice.
